Pauls Lane Shiraz
Wine
Toolangi Pauls Lane Shiraz is sourced from select rows of D Block on the winery's Yarra Valley estate, adjacent to the Toolangi State Forest.
The vines are all PT23 Shiraz grafted onto Paulsen rootstock from the original 1996 plantings. They are low cropped and hand harvested.
The fruit is partially fermented as whole bunches, with the remainder fermented as destemmed whole berries. After three weeks on skins, the wine is pressed to French oak for natural malolactic conversion.
The wine is then sulphured on lees and aged for 10 months. It is racked twice prior to bottling.
Deep red purple, Toolangi Pauls Lane Shiraz is medium bodied with spicy dark fruit flavours and rocky tannins. Cellaring potential is 10 years.
